Does USB vs. Firewire really matter that much on an iPod? The flash based iPods aren't that big and you're rarely swapping out the entire storage. The HD players are probably limited by the write speed to the HD, not the interface right?

Very much so and it's a difference I run into every few months. It's not so much either interfaces max throughput but their sustainable throughput. This is why FireWire 400 with it's lower theoretical 400 Mbps max beats the crap off of USB 2 with its max of 480 Mbps. Each can transfer a single file pretty quickly but where FireWire really shines is how fast it can repeat the process when there's a bunch of files, specifically smaller files such as music and pictures. The advantage FW has over USB is that FW was designed to do its thing without using any system memory or the CPU while USB does. This introduces latency into any I/O access and the more files you need transferred the more it adds up. Now you might not really notice it when adding say 3 o4 songs to your iPod but when you're adding entire albums or playlists it really becomes obvious and teeth grinding. The other advantages FW lords over USB is that it can supply more power and doesn't step down when adding a FW 400 device to a FW 800 bus.(USB 2 really slows to a crawl if you plug a USB 1.1 keyboard into its higher speed bus.)

iPhones go as high as 32 GB while the iPod Touch comes in at 64 GB. It's a pain when you have to restore your device for whatever reason or when doing firmware updates.

Last I checked neither interface can really saturate a hard drives bus. On this I could be mistaken though.
